Using New Outlook on Windows for professional communication and productivity
Hello Luke
As a fellow Outlook user, I can certainly relate to why you'd like this behavior to remain available in the new Outlook.
I want to share some additional information based on my review and on responses I have provided to other users who have raised the same concern.

Don't automatically mark items as read
The method above is based on my own testing. After using it, I found that I could manually mark emails as read when I was ready, without accidentally doing so while checking emails, so I wanted to share it with you.
- The email remains Unread when viewed in the Reading Pane.
- The email also remains Unread when opened in a separate window.
- The message must be manually marked as Read
You may choose:
"Don't automatically mark items as read"
You can give it a try and see how it works. Even after you click an email, it will continue to appear in bold as unread until you manually mark it as read after you have finished reviewing it.
Additionally, if you would like to provide feedback about the product, this is the right place to do so:
After you raise your concern in that forum, you can "share the link" here so others can vote for it and help increase its visibility for the product team to consider in the future.
Finally, I just want to clarify that I am also an Outlook user like you, and all I can do is try to find relevant information or workarounds to support other users, as this behavior is under the authority of the Microsoft product team responsible for New Outlook.
Thank you!
