Using New Outlook on Windows for professional communication and productivity

I completely understand your preference for a cleaner, more focused calendar view. Having the ability to hide non-working hours would certainly reduce visual clutter and help you focus entirely on your 7:30 am – 4:30 pm schedule. Your feedback on this is incredibly valid from a productivity standpoint.
I have looked into this for you, and currently, Outlook does not have a native setting to completely hide or "crop" non-working hours from the view.
The reason for this design is primarily to maintain a consistent 24-hour vertical scale. If the calendar were to "jump" from 4:30 pm one day to 7:30 am the next, it could lead to confusion regarding the actual duration of events or cause users to miss reminders and "Out of Office" appointments that might occur during those hidden gaps.
Because your workflow would benefit so much from this, I strongly encourage you to share your specific use case with our engineering team. User feedback is the primary driver for design changes in Microsoft 365.
