Hi Tara, first, Outlook currently does not allow users to change or customize the default emoji reactions in the reactions gallery. The set of reactions thumbs up, heart, celebrate, laugh, surprise, and sad is fixed and cannot be modified. Second, you can use the emoji picker when composing emails to insert any emoji you want, but this only applies to the email body, not the reactions feature. Third, you can manage reaction notifications in Outlook settings by going to the notifications panel and adjusting preferences, but this does not change the emoji set. Last, if custom reactions are important for your workflow, the only workaround is to provide feedback to Microsoft via the Outlook Feedback Hub or UserVoice, as this feature is not currently supported.
