To increase the Tab size, which is the page zoom, go to edge://settings/appearance and change the Page zoom from 100% to 125% or to your preferred value that feels comfortable on the screen.
The font size will only change the size of text on specific websites. For example, if you open your emails, the text size will be larger than the default.
Note: Your font preferences may only work on some websites. You can use CTRL and + keys altogether to increase the size of the texts.
