Answering my own question - this has been fixed with version 16.106.3 (26022714).

OneNote for iOS version 16.106 appears to have introduced an issue where the bullet indent sizes have increased significantly, in a way that adversely affects the display of bulleted text. The issue is still present in version 16.106.1, in all my notes and on all my and my wife's iOS devices. The issue is not present on OneNote on my Windows PCs. The two images below show the problem:

You can do this by opening the page in OneNote for the web, selecting the affected content, choosing Clear formatting, and then re‑applying the bullet/number style per the OneNote formatting article.
If the layout remains off on iOS, use the in‑app channel to report the bug to the OneNote team and attach your screenshots; this is the fastest way to get device/build details to engineering. In OneNote for iPhone/iPad, go to Settings > Help & Support > Contact Support / Send Feedback (or follow the OneNote iPhone help hub for troubleshooting links and “Fixes or workarounds for recent issues”). Reinstalling is generally not necessary for formatting regressions, but if you try it, ensure notebooks are fully synced first.
To help narrow scope, does the excessive indent affect only bulleted lists, or numbered lists and tagged paragraphs as well, and does clearing/re‑applying formatting in OneNote for the web change the iOS rendering after a fresh sync?
