Based on the information you provided, I am not currently aware of any publicly published Microsoft incident, service advisory, or known issue specifically describing a Teams for Education General channel being displayed in a Threads-style layout on iOS when it should be using the standard Posts layout.
However, I have seen a report from earlier this month that is very similar to your experience and has received 10+ "Same question" votes from other community members. In that case, the General channel in an EDU team appeared in a Threads-style view on iPhone, while manually created channels continued to display normally in the Posts layout and the desktop/web clients were unaffected: Unable to change General channel layout from Threads to Posts on iOS (Teams for Education)
Given the similarities, this may indicate an issue specific to the Teams iOS client rather than a configuration problem within your team.
Just to gently clarify, this forum is separate from Microsoft Support. Forum users, moderators, and Microsoft external staff do not have access to the tools, permissions, backend telemetry, or tenant-level diagnostics required to investigate issues occurring within your Microsoft 365 environment. Some issues can only be fully investigated and resolved by Microsoft's dedicated support teams.
To ensure the issue can be properly investigated and resolved, I would recommend asking your Education tenant administrator to open a support ticket through the Microsoft 365 Admin Center > Help & Support.
They may also consider reporting the issue through Health > Service Health > Report an issue, which can help provide additional visibility to Microsoft and make the product team aware of the behavior if it is affecting other tenants as well.
A Microsoft support engineer can review the tenant's backend configuration, verify whether any Teams iOS feature rollout is affecting your organization, analyze service diagnostics, and determine whether this is a client-side or service-side issue.
