I am looking for Microsoft documentation that explicitly states Entra Audit Logs and Signin Logs data is immuatable, even by Global Administrators. Where can i find that?

The official documentation articles on both audit logs and sign-in logs confirms this, see the corresponding notes therein:

If you need more robust evidence, such as adherence to specific standards and regulations, use the documents available on the Service Trust portal: https://servicetrust.microsoft.com/ViewPage/HomePageVNext
