I’ve been using the edge mobile app read aloud function to listen to various pieces of text and it has slowly become more unstable as it skips huge chunks of text and entire paragraphs as though they are not there

Hi, Emry Ortiz
Welcome to the Microsoft community.
The Read Aloud feature doesn't seem to offer any way for users to customize how it recognizes text on web pages. Based on your description, it looks like the Read Aloud recognition function has errors, causing many paragraphs to be skipped. This issue is related to Edge's functionality, so please use Edge's feedback feature to report the problem to the developers and wait for them to optimize the feature. (If specific web pages have issues, you might want to include their links.)
