For the past few days, I've been getting messages to tell me I MUST register my copy of MS Office. I did that THREE YEARS AGO! Why does MS now want to block me from using a product I BOUGHT AND PAID FOR & have been using (relatively) successfully since 2023?

Open Word.
At the top right of Word, log out of Office.
Restart (not shut down) your PC, then log back into Office, is your licence then recognized correctly.

If not, Open Word.
Go to File - Account.
Please provide a screenshot of that window and please hide your Email address in the screenshot.
It seems to think I have Office 2024. As I installed my software in 2023, and have been using it ever since, any change of version is entirely down to MS updates. If I want to revert to the version I installed, how do I do it, since MS seems to think that, because THEY'VE given me a software update that I never asked for, I now have to relicense it (and, I'm sure, pay for the privilege). Is this ransomware?

That indicates that is a volume licence version of Office used by large organizations, it is not a correct consumer licence version of Office.
Log into your Microsoft account on this link (https://account.microsoft.com/services/), do you find your Office licence linked to your account there?
If so, completely uninstall Office from your PC, then go to your Microsoft account on that link and reinstall Office from there.
