Please try these suggestion:

• Reset Excel preferences: Go to ~/Library/Containers/com.microsoft.Excel, move that folder to your desktop, then relaunch Excel. This resets corrupted preferences without deleting your files.
• Safe Mode launch: Hold Shift while launching Excel. This skips some UI elements and can help identify if a plugin or layout is causing the crash.
• Create a new user profile on your Mac and try launching Excel there. If it works, the issue is likely tied to settings in your main user profile.
• If none of that helps, a full uninstall and reinstall of Office may clear whatever is conflicting.
